Keep a few sprigs of dill behind and cut the rest roughly. Mash the peppercorns finely in the mortar. Mix the chopped dill and pepper with the sea salt and sugar.

Sprinkle the salmon fillets on one side with the dill mixture.

Place a piece of salmon with the dill side up in a bowl and place the other piece of salmon with the dill side down.

Cover with cling film and set aside for the weight (canned) cans or anything else heavy. Put in the fridge for 24 hours.

Invert the salmon after 12 hours and pour the liberated moisture over it.

Cut the reserved sprigs of dill fine just before serving. Beat the rest of the sugar with the mustard, vinegar and oil into a dressing.

Dab the salmon dry and cut into thin slices. Divide the plates and sprinkle with the dressing.
