Grilled salmon with tomato-olive salad
A nice Mediterranean recipe. The main course contains the following ingredients: fish, salmon fillets (frozen, bag a 750 g), French baguette (pre-fried), mayonnaise (with yoghurt (pot a 350 ml)), pesto alla genovese (pot a 90 g), olives with anchovies (tin a 200 g), olive oil, red wine vinegar, tomatoes and fresh basil (bag of 15 g).

Place salmon on the plate and defrost.

Bake bread in the oven according to directions on the packaging.

Mix mayonnaise with pesto.

Drain and halve the olives.

Mix 3 tbsp oil, vinegar and pepper to taste until dressing.

Cut tomatoes into wedges and mix with dressing and olives.

Cut the basil into strips.

Dry the salmon, thinly cover with the rest of the oil and sprinkle with salt and pepper.

Fry salmon on each side in hot grill pan for 2-3 min.

Spread tomato salad over 4 plates and put salmon next to it.

Make a large spoonful of pesto mayonnaise and sprinkle with basil.
