Meal salad from Gwyneth Paltrow with red onion, yellow cherry tomatoes, white wine vinegar and dijon mustard.

Directions

  1. Bring a large pot of water to the boil, boil the lentils over medium heat for about 20 minutes. Drain them, place them in a large bowl and set aside.
  2. Squeeze out the lemon. Beat in a smaller bowl a mixture of the two types of mustard, the lemon juice, the vinegar, olive oil and a good pinch of salt.
  3. Chop the onion. Halve the tomatoes and chop the parsley roughly.
  4. Put the vinaigrette in the lentils together with the tomatoes, onion and parsley. Season the salad with salt and, if desired, some lemon or olive oil.
  5. This salad tastes best if you let it rest for at least half an hour and serves at room temperature. Bon appétit! .
