Cut the iceberg lettuce and fennel bulb into thin strips and the celery and apples into thin strips (julienne).

Put the cut vegetables and apple in a bowl.

Mix the mustard, mayonnaise, yogurt and fennel seed in a small bowl into a dressing. Season with pepper and salt.

Add to the iceberg salad and scoop.
