A tasty recipe. The vegetarian dessert contains the following ingredients: cherry (without pit 370 g), berry gin (liqueur), ricotta (250 g), eggs, custard powder, white caster sugar, balsamic vinegar and butter to grease.

  1. Drain cherries over pan. In bowl mix cherries with berry gin and marinate for about 30 minutes. With a skimmer take cherries from gin (store the marinade) and drain cherries on kitchen paper. Preheat the oven to 175 ° C. Mix ricotta, eggs, custard powder and 100 g caster sugar into a smooth batter in a food processor (or in a bowl with a mixer). Grease molds well. Place cherries close together on the bottom. Create Ricotta batter. Cook golden brown and cooked in the middle of oven ricotta cheese in approx. 30 minutes. In the meantime reduce the amount of cherry juice, marinade, residual sugar and vinegar to syrup in 5-8 minutes. Let the oven crumble into molds for about 5 minutes, place a large plate on top and gently turn over. Let the cakes cool down until lukewarm.
  2. Put on four plates of ricotta cake with cherries upwards. Add some syrup over it, drizzle the rest of syrup around cakes.
