Directions

Cook penne according to directions on the package. Drain and cool in a wide bowl. Cut onion into thin slices and cucumber in half slices.

Bring the spinach to a boil with a little water until it shrinks. Leak out in a colander and allow to cool.

Drain the tuna and collect the oil. Squeeze out the lemon. Mix the oil with the lemon juice into a dressing and season with salt and pepper.

Mix the penne, spinach, remaining spinach, tuna, cheese cubes, onion, cucumber and the dressing shortly before serving.
