Mushrooms with spring onion
A tasty recipe. The vegetarian side dish contains the following ingredients: olive oil, shallot (shredded), mushrooms (seasonal mix (a 150 g)), dry white wine, crème fraîche and spring onion (in rings).

Heat the oil in a large frying pan and fry the shallot over low heat for about 6 minutes. Stir constantly. Add the mushrooms and cook for 5 minutes on medium heat. Raise the heat when the moisture is released from the mushrooms: the moisture can evaporate and the mushrooms stay nice and firm.

Add the wine and then the crème fraîche. Keep it warm for a while and season with salt and pepper. Sprinkle with the spring onions.
