Orange salad with fennel and smoked chicken
A nice Mediterranean recipe. The main course contains the following ingredients: poultry, oranges, fennel, smoked chicken breast, coarse mustard, watercress (75 g), red onion (in wafer thin rings), bluefin cheese (crumbled), black olives, honey and extra virgin olive oil.

Peel the oranges to the flesh, so that there is no white skin left.

Cut the oranges into slices, remove the seeds and collect the juice.

Scrape the fennel into thin slices with a peeler and cut the chicken fillet into long, thin strips.

Beat a dressing of orange juice, mustard, honey and oil and season with salt and pepper.

Remove the stiff branches from the watercress and scoop them with half of the dressing.

Divide the slices of orange and the watercress over a large, flat dish.

Mix the fennel slices and the onion rings with the rest of the dressing and distribute them along with the chicken fillet over the salad.

Sprinkle the salad with the crumbled cheese and olives.
