Directions

  1. Cut the chorizo ​​sausage into cubes. Heat the oil in a (soup) pan and fry the chorizo ​​on a medium heat until crispy.
  2. Chop the onion. Drain the roasted peppers and cut into large pieces.
  3. Remove the meat cubes from the pan and fry the onion in the remaining shortening.
  4. Add the grilled pepper pieces, the tomato cubes and the stock and heat for 10 minutes on medium heat.
  5. Remove the pan from the heat, puree the soup with the hand blender and add the fried chorizo ​​and the string beans.
  6. Cook the soup over medium heat for about 5 minutes until the green beans in the soup are al dente. Season the soup with (freshly ground) salt and pepper.
  7. Slice the parsley. Spoon the soup into bowls. Sprinkle some parsley over it and serve it with, for example, slices of white bread (Boule beurre).
