Ostrich steak with almond-ginger sauce
A tasty recipe. The starter contains the following ingredients: poultry, white almonds (45 g), ginger root, shallots, olive oil, dried tarragon, (freshly ground) pepper, poultry (380 ml), ostrich steaks, chicory, tomato, apple syrup, salt and whipped cream.

Chop the almonds coarsely. Peel the ginger root and cut into slices. Chop and shred scallops. Heat 2 tablespoons of oil in saucepan. Almonds, ginger and shallots gently fry for about 5 minutes. Add tarragon, pepper and fond. Heat the sauce for about 10 minutes to the boil. Remove ginger from sauce. Sauce with smooth blender until smooth.

Let ostrich steaks come to room temperature for about 10 minutes. Remove chicory leaves, halve halves and wash. Wash tomato, halve, remove seeds and cut into cubes. Heat up the grill pan. Cover meat with 1 tablespoon of oil, sprinkle with pepper and in approx. 6 minutes around brown and inside rosé grilling. Heat in wok rest of oil. Chicory stir-fry in approx. 4 minutes. Stir in apple syrup, sprinkle with salt and pepper. Whip cream with sauce and heat. Cut the steak diagonally. Spread chicory and meat on four plates, pour sauce over it. Garnish with tomato.
