Pancetta snacks with caramelized shallot
Italian amuse with cranberrypaté, crunchy pancetta and shallots caramelized with crema di balsamic vinegar.

Cut the shallots into slices.

Melt the butter in a saucepan and fry the shallots until they are soft and glassy.

Add sugar and crema di balsamic vinegar and let the whole caramelize on low heat for 30 minutes.

Heat a frying pan with non-stick coating. Divide the pâté into cubes and wrap each block in a slice of pancetta.

Fry the packets 2-3 min. In the dry frying pan until the pancetta is crispy.

Prepare tablespoons. Divide the shallots over the spoons and put in the pancetta snacks.
