Pancetta snacks with caramelized shallot


Italian amuse with cranberrypaté, crunchy pancetta and shallots caramelized with crema di balsamic vinegar.

Directions

  1. Cut the shallots into slices.
  2. Melt the butter in a saucepan and fry the shallots until they are soft and glassy.
  3. Add sugar and crema di balsamic vinegar and let the whole caramelize on low heat for 30 minutes.
  4. Heat a frying pan with non-stick coating. Divide the pâté into cubes and wrap each block in a slice of pancetta.
  5. Fry the packets 2-3 min. In the dry frying pan until the pancetta is crispy.
  6. Prepare tablespoons. Divide the shallots over the spoons and put in the pancetta snacks.
