Pasta with zucchini and mozzarella

Directions

  1. Scrape the zucchini into slices with a cheese slicer. Clean the lemon, grate the yellow skin and squeeze out the fruit.
  2. Put the courgette with the grater, the juice and the oil in a bowl, spoon and marinate for 10 minutes.
  3. Meanwhile, cook pasta as described on the package. Leave a few leaves of fresh mint for garnish and cut the rest into strips.
  4. Heat the oil in a frying pan and fry the ham for 3 minutes. Turn halfway. Scoop out of the pan and drain on kitchen paper.
  5. Slice the arugula coarsely and mix with the mint.
  6. Add the zucchini with the marinade to the remaining shortening and bake for 5 minutes on medium heat. Change regularly.
  7. Drain the pasta and add to the zucchini mixture together with the arugula. Scoop and distribute on plates.
  8. Cut the mozzarella into pieces. Divide the mozzarella and the ham over the plates, garnish with the retained fresh mint and serve.
