Penne with green asparagus
Pasta with grilled green asparagus and ratatouille
Cook the pasta al dente according to the instructions on the package.
In the meantime, remove the woody underside of the asparagus and cut the asparagus into 4 pieces.
Mix in the oil and season with salt and pepper. Heat the grill pan and grill the asparagus for 4 minutes. Turn halfway.
Meanwhile, put the ratatouille and tomatoes in a pan and heat for 4 minutes. Stir occasionally and press the tomatoes flat with the back of a spoon.
Drain the pasta and collect ½ cup of cooking liquid. Do this with the ratatouille. Tear the basil leaves and grate the cheese.
Spoon the pasta and the asparagus and season with (freshly ground) pepper and salt. Garnish the pasta with the basil and the cheese.
