Quesadilla with three cheeses and arugula
A nice mexican recipe. The vegetarian side dish contains the following ingredients: bluefin cheese (eg roquefort), crumbled), ricotta, grated cheese (spicy), red onion (in thin rings), arugula, tacos (soft (Gorditas)), freshly ground black pepper and oil (to cover).

Divide the three types of cheese, onion rings and rocket salad over 4 tacos. Sprinkle with a little pepper. Cover with the remaining tacos; press them well. Brush the outside of the 'taco sandwich' thinly with oil.

Place the quesadillas on a greased griddle and grill them 2-3 minutes per side until the cheese has melted and the tacos are light brown. Place the quesadillas on a shelf and cut each in 4 points.
