Ratatouille with mint
A tasty French recipe. The vegetarian side dish contains the following ingredients: courgettes, aubergines, shallots, garlic, cherry tomatoes, olive oil, balsamic vinegar and fresh mint (15 g).

Wash the courgettes and aubergines, halve in width and cut into strips.

Chop the shallots and cut into rings.

Clump-look peeling and chopping.

To wash.

Heat oil in stir-frying pan and cook zucchini, aubergines, shallot and garlic for 6 minutes.

To mix through and briefly fry.

Blend vegetables with vinegar.
