Use a sharp knife to cut the skin and the white skin of the oranges.

Cut the segments of flesh between the membranes and collect 3 tbsp juice (per 4 persons) in a bowl.

Grate the green skin of the lime, halve the fruit and press 1 half.

Add 1 tbsp lime juice (per 4 persons) with the honey, cayenne pepper and oil to the orange juice and beat until a dressing.

Divide the ham over the plates. Divide the lettuce, orange wedges and pomegranate seeds and sprinkle with the dressing.

Sprinkle with the lime grater.
