Pour the raspberry vinegar and olive oil into a sealable bottle or jar. Add the horseradish and sugar.

Shake everything well into a dressing and season with salt and pepper.

Peel the avocados, remove the kernel and cut the flesh into cubes. Pick the field salad leaves from the twigs.

Shake the dressing well again. In a bowl, mix the avocado lightly with 2-3 tablespoons of dressing and the lamb's lettuce.

Divide the slices of duck breast fillet over the plates. Spoon the avocado salad in the middle. Drop some dressing over the duck breast fillet.
