Salmon omelet on bread with grass butter
A tasty Dutch recipe. The lunch contains the following ingredients: fish, eggs, yogurt (lean), arugula, smoked salmon, grass butter, chives (finely chopped), cucumber and brown bread (floor).
Beat eggs with yoghurt, 1/2 tsp salt and pepper.
Splitting half of arugula.
Cut the salmon into pieces and stir in the egg mixture using finely chopped arugula.
Fry 1 tbsp butter in large frying pan.
Pour in the egg mixture and let it coagulate on low heat.
Allow the omelette to slide out of the pan and let it cool down.
Combine the rest of butter with chives and salt and pepper to taste and thinly coat bread with it.
Crumble cucumber and cheese slicer into ribbons and lay on bread.
Cut omelette into quarters and place on cucumber.
Cut bread diagonally in half.
Divide the rest of arugula over four plates and put bread on it..
