Salmon skewer with rocket sauce
Scandinavian skewers of salmon with ham and a sauce of sour cream, arugula, walnuts and horseradish

Light the barbecue.

Cut the salmon into 18 pieces and sprinkle with pepper.

Halve the slices of ham in the length. Divide half of the arugula over it.

Put a piece of salmon on it and wrap the ham around the salmon. Baste 3 pieces with 1 skewer.

Finely chop the walnuts and finely chop the rest of the arugula.

Mix the rocket, nuts, sour cream and horseradish. Season with pepper and salt.

Spread the fish skewers thinly with the oil and grill them on the barbecue in 5 min. Brown and just done. Turn halfway.

Serve the skewers with the rocket sauce. Bon appétit! .
