Salmon with white wine sauce


Baked salmon with white wine cream sauce.

Directions

  1. Chop the shallot. Spoon the shallot and the parsley in a wide pan and pour the wine and the fond. Keep some parsley for the garnish.
  2. Bring it to a boil and let the water boil down to about 100 ml. Strain this over another pan and stir in the cream.
  3. Let the sauce reduce again until it thickens. Season with salt and pepper.
  4. Melt the butter. Brush the salmon fillets on both sides with the melted butter.
  5. Place the fillets in a hot grill pan and fry in medium heat for 6-8 minutes until brown streaks appear, turning them halfway through the baking time.
  6. Put the wine sauce on the warm plates and put the salmon fillet in it. Sprinkle with the retained parsley.
