Ingredients
Directions
-
Chop the shallot. Spoon the shallot and the parsley in a wide pan and pour the wine and the fond. Keep some parsley for the garnish.
-
Bring it to a boil and let the water boil down to about 100 ml. Strain this over another pan and stir in the cream.
-
Let the sauce reduce again until it thickens. Season with salt and pepper.
-
Melt the butter. Brush the salmon fillets on both sides with the melted butter.
-
Place the fillets in a hot grill pan and fry in medium heat for 6-8 minutes until brown streaks appear, turning them halfway through the baking time.
-
Put the wine sauce on the warm plates and put the salmon fillet in it. Sprinkle with the retained parsley.
