Savory pie with tomato and onion

Preheat the oven to 200 ° C.

Grease the quiche mold with 1 tbsp oil. Place a sheet of filo pastry and brush with ½ tbsp oil.

Place a second sheet at an angle, so that the corners are staggered, and brush with oil. Repeat with the rest of the sheets. Fold in overhanging corners.

Bake for about 10 minutes in the middle of the oven.

Peel the potatoes, cut into equal pieces and boil in water with salt and garlic in 10 min. Until done.

Drain and puree with the puree mash. Season with (freshly ground) pepper and possibly salt.

Cut the onions in half rings and halve the tomatoes. Slice the garlic.

Heat the oil in a frying pan and fry the garlic, onion and thyme for 10 minutes on low heat.

Add the vinegar and cook for 5 minutes on medium heat. Season with (freshly ground) pepper and possibly salt.

Divide the puree over the filo pastry and scoop the onion mixture. Divide the tomatoes with the cutting edge upwards and sprinkle with pepper.
