Spanish potato soup with artichoke hearts
A tasty Spanish recipe. The main course contains the following ingredients: meat, olive oil, onion (in rings), red pepper (in long strips), potato slices (pre-cooked), tomato puree (70 g), chorizo sausage (in slices and in quarters), vegetable stock (from tablets) , marinated artichoke hearts ((285 g), drained), (garlic) chives ((a 20 g), finely chopped) and dry sherry.

Heat oil in a large pan.

Spread the onion and bell pepper for 1 min.

Stir in potato slices, tomato paste and chorizo.

Bring the bouillon.

Bring the soup to the boil and let it simmer slowly on the pan for 8 min.

Add artichoke hearts and cook for 2 minutes.

Soup soup in plates and garnish with garlic chives.

Delicious with coarse slices of wholemeal bread.

Season to taste with freshly ground pepper and sherry..
