Spice rice with eggplant skewers


A tasty recipe. The vegetarian main course contains the following ingredients: carrots (Parisian), eggplant, onion, garlic, fresh parsley (30 g), peanuts (salted), olive oil, cajun spices, cinnamon powder and basmati rice (1 minute (2 x 150 g)).

Directions

  1. Halve carrots.
  2. Cut aubergine into cubes.
  3. Cut onion into wedges and cut garlic.
  4. Parsley finely chop.
  5. Peanut coarsely chop.
  6. Mix eggplant cubes with 1 tbsp oil, 1/2 tbsp cajun spices, half garlic and salt and pepper to taste.
  7. To string 8 skewers.
  8. Heat the remaining oil in a large pan.
  9. Carrot for 5 minutes on a low heat.
  10. Add onion, garlic, cajun spices and cinnamon.
  11. Approx.
  12. Cool for 10 minutes on medium heat.
  13. Arrange regularly.
  14. Meanwhile, eggplant skewers in dry hot grill pan in approx.
  15. 5 min.
  16. Around cooked and golden brown.
  17. Heat rice according to directions on packaging.
  18. Add half parsley and warm rice to carrots and mix well.
  19. Peanuts and to taste add salt and pepper to spice rice.
  20. Pour on 4 plates and place eggplant skewers next to it.
  21. Sprinkle rice with rest of parsley..
