Spicy rabbit in a Mediterranean way
A nice Mediterranean recipe. The main course contains the following ingredients: meat, fresh Italian spice mix (20 g), shallots, garlic, lemon, dried tomatoes in oil, black olives without seeds, anchovy fillets (tin), rabbit bolts, flour, olive oil, salt and pepper, oregano, dry white wine and fresh basil (15 g).

Sprinkle thyme and rosemary from sprigs, thinly mix with the rest of the herb mix.

Chop the shallots and garlic and finely chop.

Lemon brooms, peel fine graters.

Squeeze out half lemon.

Cut tomatoes, olives and anchovies into pieces.

Lightly sprinkle rabbit bolts with flour.

Heat oil in pan and sear meat around.

Remove from the pan, sprinkle with salt and pepper.

Fry shallots and garlic for 2 minutes in shortening.

Add fresh herbs and oregano.

Stir in lemon zest and juice, tomatoes, olives, anchovies and wine.

Boil the sauce, place the meat in it and cook gently with a lid on the pan for about 1 hour.

Turn the bolts occasionally, add water or wine if necessary.

Picking basil stalks, roughly tearing leaves.

Distribute rabbit bolts over four plates, add sauce and garnish with basil.

Serve with mashed potatoes and mixed salad..
