Spinach with pine nuts
Vegan side dish with spinach, mint, parsley, raisins and pine nuts.

Let the raisins soak in hot water for about 5 minutes.

Cut the shallot finely.

Roast the pine nuts in a dry frying pan until light brown, scoop them occasionally.

Slice the parsley and the fresh mint. Cut the spinach coarsely.

Heat the oil in a frying pan. Fry the shallot for 2 min. Fry the spinach while stirring on half high heat and let it shrink.

Let the raisins drain.

Squeeze the garlic over the spinach. Add the raisins, pine nuts, parsley, fresh mint and allspice. Season with salt and pepper.
