Summer salad with Dutch goat's cheese
Salad with goat's cheese, nectarines, walnuts and mint.

Cut the crusts of the cheese and scrape the cheese into slices. Cut the slices into long strips of 1 cm wide.

Pick the leaves from the mint branches and cut the nectarine into segments. Heat the grill pan.

Brush the nectarines thinly with oil. Gril on both sides 1 min.

Squeeze the lemon over a salad bowl. Add the honey and oil and season with salt and pepper. Beat to a light-bound dressing.

Scoop the cheese strips, lamb's lettuce, arugula, fresh mint and walnuts loosely through the dressing.

Place salad in deep plates and divide the segments of grilled nectarine over them. Serve with dark baguette.
