Thai salad of crushed cucumbers


Salad of red pepper, garlic, lime, misfits cucumber, fish sauce, coriander and sugar peanuts.

Directions

  1. Remove the seeds from the red pepper and cut the flesh into pieces of ½ cm.
  2. Put in the mortar together with the garlic, crush the pepper and crush the garlic as finely as possible.
  3. Halve the lime and press until you have 3 tbsp juice (for 4 persons). Cut the other lime into pieces. Stir in the fish sauce and the lime juice through the garlic and pepper.
  4. Place the cucumbers on a large firm cutting board. Cut the cucumbers with a rolling pin and then cut into smaller pieces with a knife.
  5. Cut the coriander very coarsely and chop the peanuts roughly. Scoop all other ingredients together and sprinkle with the peanuts. Serve with the lime parts.
