Tomato salad with onion, cucumber, red pepper, coriander and mint.

Directions

  1. Cut the onion into thin rings. Soak the onion rings for 10 minutes in ice-cold water (for extra crunchiness).
  2. Roast the cumin in a frying pan until the fragrance is released. Squeeze out the lime.
  3. Cut the tomato and cucumber into slices. Cut the coriander and fresh mint coarsely.
  4. Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife. Cut the pepper finely.
  5. Beat in a bowl a dressing of the lime juice, the sugar, half of the cumin and season with salt and pepper.
  6. Spoon in the tomato, cucumber, red pepper, coriander, half of the fresh mint and half of the onion.
  7. Let cool in the fridge. Garnish just before serving with the rest of the onion and mint. Sprinkle the rest of the cumin over it.
