Tomato soup with fresh basil
Soup of tomatoes with shallot, garlic, paprika powder and fresh basil

Chop the shallots in super small pieces and the garlic finely. Heat the oil in a soup pan and fry the shallot and garlic over low heat until they look transparent.

Cut the tomatoes into quarters. Put in the pan and fry for 5 minutes.

Add the paprika powder.

Remove the leaves from the basil and put the stalks in the pan with the tomatoes.

Add the stock and simmer for 10 minutes. Puree the soup with the hand blender.

Add some pepper and salt if you like.

Put the basil leaves in the soup at the last minute and stir. Divide the tomato soup into large bowls and decorate with a few more basil leaves.
