Trout on toast


A tasty recipe. The starter contains the following ingredients: fish, bread (boule beurre), semi-skimmed milk, almond shavings (55 g), cherry tomatoes (a 250 g), grilled peppers (red, 295 g), garlic (chopped), olive oil and smoked trout fillet ( a 125 g).

Directions

  1. Cut 4 thin slices of bread. Remove the soft inside from the rest of the bread and soak it in the milk. Roast the almond for 3 minutes in a frying pan without oil or butter. Cut the cherry tomatoes into quarters.
  2. Squeeze the soaked bread and place it in a bowl. Add the peppers, the moisture from the pot, the garlic and 2/3 of the almonds. Puree with the hand blender into a sauce. Season with salt and pepper.
  3. Sprinkle each slice of bread with 1 tbsp oil and grill for 3 min on each side in the grill pan. Divide the trout over it, sprinkle with the rest of the almond and garnish with the tomato. Serve the sauce separately.
