Cut as much meat as possible from the bone of the turkey. Cut the meat into strips.

Grate the yellow skin of the lemon and squeeze out the fruit. Mix the mayonnaise with the grater, crème fraiche and shallot. Slice the leaves of the tarragon and scoop through the mayonnaise. Season with the lemon juice and pepper and salt.

Toast the bread in the toaster. Divide the turkey over 4 slices of bread and spoon the tarragon mayonnaise on it. Cover with the rest of the bread and serve.
