Directions

  1. Trim trout skin on both sides 3 times. Rub trout inside and out with lemon juice and salt. Fill belly with twigs of thyme. Store in a refrigerator until used. Smoke chips (50 g) for about 1 hour in plenty of water.
  2. Prepare barbecue for indirect grilling and green salad.
