Aubergine roast beef rolls with spicy mint sauce
A tasty recipe. The starter contains the following ingredients: meat, aubergines, lime, mint (15 g), garlic (pressed), Thai fish sauce, oil, sugar, red pepper (in wafer thin strips), roast beef and freshly ground black pepper.

Cut tips of aubergines and cut 6 long slices of each eggplant.

Place slices in colander, sprinkle with salt and leave to stand for 10 minutes.

In the meantime, cut 4 thin slices of lime, squeeze out the rest of the fruit.

In a mortar or in a small bowl of food processor, fresh mint leaves with garlic, fish sauce and 3-4 tbsp oil until smooth sauce.

Season mint sauce with lime juice, sugar and salt.

Dab eggplant with kitchen paper.

Heat up the grill pan.

Cover aubergine on both sides with 1 tbsp oil and roast golden brown and cooked in 2 portions in the grill pan.

Paste the slices halfway, so that a nice diamond pattern is created.

Spread the roasted aubergine on the cutting board and let it cool down.

Place a slice of roast beef on each slice of eggplant.

Pepper above it.

Stir in aubergine slices and secure with cocktail stick.

Divide rolls over four plates, create mint sauce and garnish with slices of lime..
