A nice Mediterranean recipe. The vegetarian side dish contains the following ingredients: aubergines, sea salt (coarse), spring onion (3 pieces), olive oil, mint ((15 g), leaves coarsely cut), coriander ((15 g), leaves coarsely cut) and lemon (in parts).

Directions

  1. Light the barbecue. Cut the aubergines into round slices of 1 cm thick. Mix them in a bowl with the salt and let stand for 20 minutes. Change after 10 minutes. Meanwhile cut the bottom of the spring onion. Cut them into 3 pieces and mix with 1 tbsp oil. Mix the fresh mint and coriander with 3 tbsp oil.
  2. Rinse the aubergine under cold running water and pat dry with kitchen paper. Brush with 2 tbsp oil and grill for 5 minutes on the barbecue or in the grill pan. Times regularly. Roast the spring onions for 3 minutes. Turn regularly. Let everything cool down.
  3. Mix the aubergine with the spring onions, herbs and pepper and salt. Serve with the lemon. Tasty with vegetable burgers and couscous.
