Carpaccio with grilled fennel
A tasty recipe. The starter contains the following ingredients: meat, arugula (lettuce, 40 g), Parmesan cheese (grated), pine nuts, olive oil, fennel and carpaccio (a ca. 125 g).

Put the arugula, cheese, pine nuts and 4 tbsp oil in the food processor. Puree to pesto. Season with salt and pepper.

Leave the stalk on the fennel and cut the fennel lengthwise in slices as thin as possible. Drizzle with the rest of the oil and grill for 3 minutes on each side in the grill pan. Put in a bowl and mix with the dressing of the carpaccio.

Divide the carpaccio over 4 plates. Spoon the pesto and fennel on it. If necessary, sprinkle with the cheese flakes of the carpaccio and pepper to taste.
