Catalan sausage skewers with lemon mayonnaise


Skewers of Catalan sausages with bacon, sage and homemade mayonnaise.

Directions

  1. Light the barbecue.
  2. Meanwhile, put the egg yolks with the mustard in a bowl. Pour in a whisk with a whisk oil.
  3. Beat until all the oil has been absorbed and you have a creamy, smooth mayonnaise.
  4. Grate the yellow skin of the lemon and squeeze out the fruit.
  5. Slice the capers and parsley. Add to the mayonnaise together with the lemon zest and 1 tbsp lemon juice (per 4 persons).
  6. Season with black pepper and salt. Optionally add extra lemon juice to taste.
  7. Peel the onion and cut into 2 parts per person.
  8. Put 3 small sage leaves on each slice of bacon and wrap a sausage in it. Baste around 3 sausages and 2 onion slices on each skewer.
  9. Gril the sausage skewers on the barbecue in about 15 min. Golden brown and done. Times regularly.
  10. Serve with the lemon-caper mayonnaise.
