Catalan sausage skewers with lemon mayonnaise
Skewers of Catalan sausages with bacon, sage and homemade mayonnaise.

Light the barbecue.

Meanwhile, put the egg yolks with the mustard in a bowl. Pour in a whisk with a whisk oil.

Beat until all the oil has been absorbed and you have a creamy, smooth mayonnaise.

Grate the yellow skin of the lemon and squeeze out the fruit.

Slice the capers and parsley. Add to the mayonnaise together with the lemon zest and 1 tbsp lemon juice (per 4 persons).

Season with black pepper and salt. Optionally add extra lemon juice to taste.

Peel the onion and cut into 2 parts per person.

Put 3 small sage leaves on each slice of bacon and wrap a sausage in it. Baste around 3 sausages and 2 onion slices on each skewer.

Gril the sausage skewers on the barbecue in about 15 min. Golden brown and done. Times regularly.

Serve with the lemon-caper mayonnaise.
