Make long ribbons from the celeriac with a cheese slicer or peeler.

Bring water to the boil in a pan and cook the celeriac ribbons in approx. 2 min. Until al dente (blanching). Drain.

Beat a dressing of the oil, vinegar, mayonnaise and sugar. Season with salt and pepper.

Cut the parsley finely and the spring onion in rings. Mix the celeriac with the dressing and leave for at least 10 minutes.

Sprinkle with the parsley and the spring onion.
