Put the cookies in a plastic bag and roll the crumb with the rolling pin. Put the crumb in a bowl and mix with the malibu.

Spread the cookie crumb over the bottoms of the jam jars and press with the convex side of a (soup) spoon.

Peel the kiwifruit and cut into ½ x ½ cm cubes. Cut the pineapple and papayas into cubes of ½ x ½ cm.

Grate the green skin of the lime and squeeze out the fruit. Mix the lime zest and juice with the kiwi, pineapple and papaya into fruit salad.

Beat the whipped cream until stiff. Put a pan with a layer of water on the fire. Break the chocolate into pieces and put in a bowl.

Hang the bowl with chocolate in the pan with hot water. Make sure the bowl does not touch the water. Let the chocolate melt (au bain-marie).

For the cream cheese filling, stir up the fresh cream cheese and mix with the whipped cream and the melted chocolate.

Divide half of the fruit salad over the four cookie bottoms and cover with the cream cheese filling.

Spread the rest of the fruit salad over it and leave the cheesecakes covered in the fridge for 30 minutes.

Cut the lime from the papaya tray into four parts. Garnish with the lime wedges. Yummy! .
