Directions

  1. Sift the flour over a bowl and mix in the crystal and vanilla sugar.
  2. Cut the cold butter into cubes and put them in the bowl. Cut two knives crosswise through the flour mixture, until the butter pieces are very small.
  3. Split the egg (protein is not used). Add the egg yolk to the mixture and quickly knead the mixture with cool hands into a cohesive dough.
  4. Form a dough ball, wrap in cling film and place in the refrigerator for 30 minutes.
  5. Preheat the oven to 175 ° C.
  6. Break the chocolate into pieces. Knead the chocolate through the dough.
  7. Line the baking sheet with parchment paper and shape dough balls as big as a walnut and place them 5 cm apart on the baking sheet.
  8. Press slightly flat and bake the cookies in the middle of the oven for about 15 minutes until done.
  9. Lift the parchment paper off the baking sheet and allow the cookies to cool for at least 30 minutes.
  10. Melt the butter and stir in a bowl an even cream of the butter, powdered sugar and cocoa powder.
  11. Spread half of the biscuits with a layer of chocolate cream and stick a second biscuit against it.
