Cod fillet with raisins and pine nuts
A tasty Spanish recipe. The main course contains the following ingredients: fish, pine nuts, red peppers, raisins, dry white wine, shallots, olive oil, salt and pepper, cod fillet (a ca. 150 g), flour and butter.

Spread the pine nuts in a light frying pan until lightly browned.

Clean pepper and cut into small cubes.

Mix raisins and wine.

Chop the scallops and coarse shreds.

Heat 2 tablespoons of oil in saucepan.

Carefully cook the shallots and bell pepper for about 4 minutes.

Add raisins with wine and reduce wine to approx.

4 tablespoons.

Season with pepper.

Dice cod with kitchen paper, sprinkle with salt and pepper and swirl through flour.

Fry butter and 2 tablespoons of oil in frying pan with non-stick coating.

Fish fillets in 6 to 7 minutes golden brown and cooked.

Reheat paprika raisin sauce.

Divide fish over four plates and create sauce.

Sprinkle pine nuts over it.

Serve with rice and fennel..
