Put the peas in a heat-resistant bowl and place them just under boiling water.

Pour the peas after 1 min, drain in a sieve and put back in the bowl. Crumble the feta above and sprinkle with the fresh mint and a lot of pepper.

Break the eggs over another bowl and beat them with a metal whisk. Add the salt flakes and some pepper.

Brush a small non-stick pan lightly with the oil and place the pan over medium heat.

Pour the beaten eggs into the pan and wait until they start to solidify. Use a wooden spoon to bring the smooth side to the middle.

Do this 5-6 times, until you have passed the whole edge.

By moving the solidified egg, you ensure that the unripe egg goes to the vacated space and can then be cooked.

Sprinkle the peas with feta over the omelette and cook for another 3 minutes, until the egg has just set.

Carefully loosen the side with a spatula, fold the omelette double and let it slide on a preheated plate.
