Eggplant Puree


A nice Turkish recipe. The vegetarian starter contains the following ingredients: eggplants, lemon, garlic, olive oil (extra virgin), Greek yogurt, salt, (freshly ground) pepper and parsley.

Directions

  1. Preheat the grill to the highest setting.
  2. Wash aubergines and leave the crowns.
  3. Place aubergines (not too close) under hot grill and roast for approx.
  4. 20 minutes until the skin starts to peel and aubergines are soft.
  5. Occasionally return.
  6. Place aubergines on a shelf and allow to cool slightly.
  7. Meanwhile, squeeze out lemon.
  8. Peel garlic.
  9. Sharpen aubergines in length with half a knife and scrape flesh from the skin.
  10. Put aubergine puree in bowl and finely chop with fork.
  11. Stir in lemon juice.
  12. Squeeze out garlic.
  13. Add oil and yogurt and stir well.
  14. Season with salt and pepper.
  15. Parsley above it finely cut.
  16. Lukewarm or at room temperature with warm shawarma rolls..
