Eggplant with lamb and couscous
A nice Moroccan recipe. The main course contains the following ingredients: meat, couscous (pack 500 g), olive oil, lamb sausages ((270 g), in pieces), aubergine (diced), onion (in thin rings), ground cumin, mint ((15 g) ), leaves finely chopped), tomatoes (diced), chickpeas ((400 g) and drained).

Put the couscous in a large bowl and pour 300 ml of boiling water over it. Cover with cling film and leave for 10 minutes.

Meanwhile, heat 2 tbsp oil in a frying pan and fry the sausage, eggplant, onion and cumin for 15 min. On low heat. Change regularly.

Spoon 2 tbsp oil and fresh mint through the couscous and season with salt and pepper. Add the tomatoes and chickpeas to the meat-vegetable mixture and warm for another 3 minutes. Scoop occasionally. Serve with the couscous.
