Eggplant with mushroom and tomato
A tasty Spanish recipe. The vegetarian side dish contains the following ingredients: aubergines, dried thyme, red wine, mushrooms, cherry tomatoes, tomato, shallot, balsamic vinegar, olive oil and garlic.

Cut the aubergines into large dice, place them in a colander, sprinkle them well with salt and let them stand for 15 minutes.

Rinse the salt of the eggplant cubes and pat dry with kitchen paper.

Stir in the aubergine with the thyme, red wine, 4 tbsp olive oil and the garlic.

Leave it for 5 minutes.

Now glide around a block of eggplant, a mushroom and a cherry tomato on a stick.

Spread the skewers with a brush with olive oil and sprinkle them well with salt and pepper.

Grill them for 6-8 minutes until they are brown and the toasted.

Turn the skewers while grilling..
