Fast panzanella with smoked chicken


Smoked chicken with Italian bread salad.

Directions

  1. Tear the bread into pieces. Let the grilled peppers drain and cut into pieces.
  2. Halve the fresh peppers, remove the seeds and cut into 2 cm pieces. Cut the onion into wafer-thin half rings.
  3. Halve the tomatoes. Let the capers drain and absorb 2 cubits of liquid. Tear the leaves of basil into pieces.
  4. Mix the bread, the vegetables, capers including the 2 tablespoons of water, pizzasauce, pine nuts and 2/3 of the basil in a large bowl.
  5. Season with pepper and salt. Cut the chicken fillet into thin slices and place on the salad. Sprinkle with the rest of the basil.
