French cheese quiche
French quiche with port salut, camembert and brie.

Cut the butter into cubes.

Sift the flour over a bowl. Add the salt and the cubes of butter and knead with crumbles with your fingertips.

Add cold water and quickly knead to a cohesive dough. Wrap the dough in tin foil and place in the refrigerator for 30 minutes.

Preheat the oven to 200 ºC.

Remove the dough from the refrigerator, roll out with the rolling pin into a round piece of 30 cm and cover the quiche mold.

Chop the onion. Spread the raisins and onion over the dough on the bottom of the mold. Cut the cheeses into pieces and place on the bottom.

Beat the eggs with the crème fraîche, season with pepper and pour over the cheese.

Fry the quiche in the middle of the oven for about 40 minutes until it is golden brown and done. Serve warm or lukewarm. Yummy! .
