Grilled chicken sandwich with avocado
A tasty recipe. The lunch contains the following ingredients: poultry, oil, sambal bathrobe, lime (squeezed), chicken fillet (a la minute, approx. 250 g), little gem (lettuce), avocado, bread (corn or Goois sunflower bread), fresh pesto (coriander pesto and 100 g).

Fry oil, sambal and 1 tbsp lime juice into marinade in deep plate. Fry chicken fillets through marinade and allow them to soak for at least 5 minutes. Release lettuce leaves from the heads. Grill the grill pan and roast chicken breasts 2-3 min. Per side, until chicken is nicely browned and cooked. Remove chicken from pan, allow to cool and cut into strips.

Peel avocado, remove kernel and slice avocado. Sprinkle with lime juice. Slices of bread spread with coriander pesto. Split half of the lettuce leaves over 4 slices. Place slices of avocado on them. Put 4 slices of bread on top and lay the rest of the lettuce leaves and grilled chicken on it. Cover with last slices of bread, with pesto side down. Press sandwiches slightly and cut diagonally.
