Grilled zucchini ribbons
Zucchini grilled with a spicy oil of red pepper, garlic and lemon.

Cut the bottom and top of the zucchini and scrape the zucchini into long ribbons.

Cut the stalk of the red pepper. Halve the pepper in the length and remove the seeds. Cut the flesh into pieces.

Clean the lemon and grate the yellow skin. Halve the fruit and press 1 half.

Mash the red pepper with the grater, 1 tbsp lemon juice, the oil, garlic and, if necessary, salt with the hand blender into a seasoning oil.

Heat the grill pan. Brush the zucchini ribbons on both sides with the herb oil.

Pour the rest of the oil into a bowl. Grill the zucchini ribbons in portions in 2 min. Golden brown. Turn halfway.

Put the grilled zucchini ribbons in the bowl with herb oil, scoop and leave to marinate outside the refrigerator for 2 hours before serving.
