Noodles with grilled eggplant and lime chicken

Heat the grill pan.

Halve the lime and grate of 1 half the green skin.

Press out both halves.

Spoon the chicken with the lime juice and grater, garlic and 2/3 of the coriander.

Season with salt and pepper.

Sprinkle the aubergine with a pinch of salt and with 1 tbsp oil.

Roast the aubergine on a high heat for 4-5 minutes until golden brown and done.

Turn halfway.

Prepare the noodles according to the instructions on the package.

Heat 2 tbsp oil in a small frying pan and fry the chicken over a high heat for 4-5 min.

Add the lime marinade and let the larger part reduce.

Drain the noodle.

Mix the arugula, the chicken with the baking water, the eggplant and the rest of the coriander through the noodles..
