Ostrich in pepper sauce
A tasty recipe. The main course contains the following ingredients: poultry, (ostrich) steaks ((a 2 pieces) at room temperature), 4 seasons pepper (grinder 35 g), butter, shallots (chopped), garlic (chopped), sambal oelek, meat fond (pot) 380 ml) and whipped cream (250 ml).

Sprinkle the steaks with the 4 seasons of pepper and salt to taste. Heat 20 g of butter in a saucepan and fry the shallot, garlic and sambal on low heat for 15 minutes until lightly browned. Pour in the fond and cook on low heat for 20 minutes. Bring the whipped cream to a boil in another pan and reduce to half of the heat on low heat. Pour the fond through a ball sieve with the whipped cream. Season with salt and a good 4 seasons of pepper.

Heat 20 g butter in a frying pan and fry the steaks in 5 min. Rosé. Turn halfway and immediately add the rest of the butter. Remove the steaks from the pan and let them rest on a (hot) plate for 5 minutes under a lid or aluminum foil. Serve the meat with the sauce.
